Humans began smelting iron around 3500 years ago and it's still one of the finest materials we have for cooking. Iron conducts heat beautifully and if cared for, will last for decades. Iron pans can be heated to searingly hot temperatures and once hot will retain the heat when food is added making them idea for meat, stir fries and crisping potatoes. Iron is also great for oven to table dishes as the food will stay hotter than in copper, steel or aluminum. Don't be put off my fears about complex care requirements, once your pan is well seasoned it will need little more than a wipe out after cooking and will improve with each and every use!
